Kiln to Table: Megan Brijalba & Paul Wensel (Hestia) - Sun, May 25, 6PM
Under chefs Megan Brijalba and Paul Wensel’s watch, Hestia’s evolved over the last few years and—recently, notably—has earned itself a Michelin star, one of the first among 14 others in Texas. Local ingredients, live-fire cookery, and fermentation has long been the beating heart of the Austin restaurant. But the chef duo has additionally engineered a tasting menu that serves as Hestia’s multicourse manifesto.
“There are some times when we want to do some not-weird, but fun, eccentric things, and 9 times out of 10 it’s received really well,” says Brijalba. “We can put something we’re geeking out over and then so are the guests.”
To that end, geek out with these two incredibly talented chefs here at Marcello Andres Ceramics for our next Kiln. toTable dinner on Sunday, May 25. The pair will bring eight courses of their not-weird—but hopefully maybe a little weird—and eccentric food. Making appearances on our ceramics: soft shell crab with crab fat mayo and fermented tomato; kampachi with coriander, honey dew, and house-made fish aminos; the scallop with beef fat tallow and mushroom-miso gels.
