Kiln to Table: Shine Tamaoki - Mon, Jan 20, 6PM
Like many chefs who stand at the border of two culinary worlds, chef Shine Tamaoki is as much an interpreter of tastes as he is the creator of them. At Pearl in Knox-Henderson, where Shine slices sashimi with precision and forms nigiri behind a sushi counter, the traditions of Japan and the palates of Texas collide. His nearly seven years of experience at Nobu, his life in Texas, and his interspersed upbringings in Japan make him a cross-cultural translator. He’s also our next Kiln to Table chef for January.
We’re excited to have Shine kick off our 2025 Kiln to Table series. Young, talented, and skilled in the ways of sushi, Shine says he’s still finding his true identity as a chef. But if you’ve ever experienced a meal at Pearl—and you should—his care for sourcing incredible fish and respect for the craft of sushi is clear.
For our Kiln to Table dinner, Shine brings this thoughtful ethos into the studio for a special eight-course dinner brimming with incredible bites. West Coast oysters meet Japanese Tiger shrimp, and, later in the dinner, flounder will be sliced to near translucent thinness in the Hirame Usuzukuri with Ponzu Jelly course. Japanese A5 Miyazaki Wagyu will make an appearance. And throughout the dinner, there will be pours of wine and sake.

We usually bring the ceramics to the chef, but now we’re bringing the chef—and dinner—to us. Our Kiln to Table dinner series invites professional chefs into our studio and showroom to cultivate a special dining experience. Please join us this month at our quonset hut in the Cedars.
Kiln to Table is an extension of the studio's goal of connecting people with food and each other through artful ceramics and conviviality.
